Oregano Roasted Lamb Ribs

This is a really simple way to roast lamb ribs.  Salt and pepper on both sides, generally rub with oregano, minced garlic, and red pepper flakes to taste.  Sprinkle with a little lemon juice.  Lightly grease a roasting pan.  Add a couple of bay leaves to the pan.  

Pre-heat oven to 350 degrees F.  Roast ribs until nicely browned, about 1 hour.  About half an hour in, add a bunch of cippollini onions, halved and tossed with salt and pepper.  Remove from the oven and let rest for about 5 minutes.  Slice into individual ribs and serve.
