Za'atar and Parmesan Chicken Strips

The za'atar mix I used here is a blend of dried rosemary, thyme, black sesame seeds and sumac.  Available at Cookbook.


INGREDIENTS:
2 chicken breasts, cut diagonally into long strips
1/4 cup olive oil
2 tbs za'atar (or toss in thyme and rosemary)
2 cloves garlic, minced
red hot pepper flakes
black pepper
panko or regular bread crumbs (in my case, I ran out of bread crumbs so I crumbled up some seasoned pita chips I had left over in the snack cabinet)
about 1/4 cup grated Parmesan

METHOD:
Pre-heat oven to 375 degrees.  Ideally, create the olive oil mixture well in advance of dipping the chicken so the flavors can develop.  In a shallow bowl, add the olive oil, garlic, red pepper flakes, black pepper, and za'atar.  Dip chicken strips in olive oil mixture then in the bread crumbs.  Transfer to lightly greased baking pan.  Bake for 25-30 minutes until golden brown.
