Messy Potato Gratin with Thyme, Fontina, and Goat Cheese


So I didn't really have the ingredients or the desire to make a proper gratin here... 

Just slice up some young red potatoes (they cook fast).  Toss with salt, pepper, olive oil and garlic (optional).  Lay the potato slices in a single layer on a roasting pan as well as you can ... it won't be perfect.  Sprinkle with fresh thyme and whatever melty cheeses you have... I used fontina and goat cheese.  You could use pecorino romano, fontina, grueyere, or gorgonzola... Bake at 375 degrees F until it looks done... about 30-45 minutes.
